FRIED EGG SALAD (YAM KHAI DAO)
A practical, crunchy Thai salad recipe. One of those dishes you make your own in a snap and which goes alongside anything!
We love it just with plain brown or black rice and with Massaman Curry.
INGREDIENTS (Serves 4)
Prepare the sauce, similar to Thai Mango Salad: mix soy sauce, tamarind sauce and palm sugar palm in a pot. Turn on a low heat so the palm sugar can melt. Cool down the sauce.
Mix the sauce with eggs, tomatoes and onions in a salad bowl. Flavour on top with green onions.
